Almond Flour Sunbutter Waffles


Yields: 4 large waffles

  • 1 1/2 cups almond flour
  • 3 eggs (whites and yolks separated)
  • 3/4 cup canned coconut milk (full fat)
  • 1/4-1/2 cup almond milk
  • 1/4 cup sunflowerseed butter
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • cinnamon, to taste
  • salt, to taste

Turn on waffle iron to heat up.

Whisk together egg yolks and coconut milk.

Combine almond flour, baking soda, cinnamon, and salt in a separate bowl.

Add wet ingredients to dry and mix together.

Add in honey/maple syrup, vanilla, and sunflower seed butter and continue to mix.

Next, add almond milk. Start with 1/4 cup and add more if needed. You want the mixture to stay fluffy, not thin out.

In a stand mixer, whisk egg whites until they become fluffy and stiff peaks form (this will take a few minutes).

Fold egg whites into batter.

Pour batter into waffle iron and cook to your preferred crispiness.

Top with fruit, grass-fed butter, maple syrup, chocolate chips, more nut butter, etc.

Eat your pants off.

  • Total time: 25 minutes

    These taste delicious but mine stuck to the waffle iron so it came out in hundreds of pieces. I ate it anyway but not sure what I did wrong. Such a mess to clean my waffle iron. Scared to try the rest of the batter. Help?

    These were amazing! The only thing is it turned green!!! I’ve read that it has something to do with baking soda. Has that ever happened to you / any suggestions to prevent that? They were still good

    Made a batch this morning — delicious! Not as crunchy as Belgian waffles (would coconut flour help?), but worthy substitute. Especially with fresh blueberries & strawberries on top! Definitely a fan of the sunbutter!! Thanks for sharing your paleo pleasures!
