Chewy Chocolate Chip Cookies

Chewy Chocolate Chip Cookies

Yields: 1 dozen cookies

  • 1 egg
  • 1/4 cup honey
  • 3 tbsp grass-fed butter, softened
  • 1 tsp vanilla
  • 1 1/2 cups almond flour
  • 1/2 cup shredded unsweetened coconut flakes
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup Enjoy Life chocolate chips

Preheat oven to 350.

Whisk together egg, honey, butter, and vanilla in a large bowl.

In a separate bowl, combine almond flour, coconut, baking soda, and salt.

Slowly add dry ingredients to wet until all are well incorporated.

Stir in chocolate chips.

Spoon heaping tablespoons of batter onto a baking sheet lined with parchment paper, leaving plenty of room between each.

Bake for 10-12 minutes, or until cookies begin to brown on top.

Let cool on baking sheet for 10 minutes, then remove to wire rack to cool completely.

Eatttttt!

  • Preparation time: 5 minutes
  • Cook time: 10 minutes
  • Total time: 15 minutes

    You’re 6′ too? Me too- the struggle is real for 6’0 females and crossfit, no joke! We have so much farther to go than the other women because our limbs are so long and we lack the strength/testosterone guys our height have. Cookies look deeeelish. Go bucks!

    I’m also 6 feet and pretty terrible at crossfit. Except rowing tall people rock at rowing. Also, these look delish. I don’t know if i will make them though, I would probably eat the entire batch to myself. Which would be terrible, or not… tough call.

    I’m 6’2 and it’s a benefit for box jumps, wall balls, max height box jumps, and rowing! look @ the positives!

    I’m also an amazon and while it is harder to do things we’re built for the following:
    1. Wall balls
    2. Lifting and carrying heavy stuff (yoke walks, deadlifts, just to name a few)
    3. Pushing the sled with weight on it.
    4. Ball slams
    5. Rope climbs (These are hard but advantage: halfway there when you’re up on the rope!)

    ohmygosh yes, being 6ft tall in crossfit is not cool. I am also exactly 6ft tall. Maybe a 1/2 inch more but I prefer to say 6ft because that’s tall enough.

    These cookies look like they are about to rock my world.

    Ohh what a delicious disaster I made of these! Totally missed the part that said leave plenty of room between them, so I ended up with one giant cookie…. still amazing, next time I might pay a bit more attention why trying a new recipe for the first time!! πŸ™‚

    I’m from Columbus, I’m OSU alumni and I eat paleo… crazy. We’re like twins but I’m short and half-Japanese, otherwise the similarities would be nuts. I just found your site and I’m already obsessed. I’m good with savory paleo foods and dinners, but I need major guidance in the baking department. I can’t wait to make these tomorrow for my kids!

    I have to say these are by far the best paleo chocolate chip cookies I’ve made. I think that the chewiness of the added coconut is what sold me. Bravo!

    These are the BEST paleo cookies I’ve made to date! I made a few small modifications: I cut the almond flour to 1 1/4 cup and added 1/4 coconut flour and held off on the coconut (not my fav). They were wonderful! I also don’t buy almond flour, but buy raw almonds and grind it in my magic bullet πŸ™‚

    Just made these. They were ok. Not sure what I did wrong, but it’s worthwhile to mention you should smush them down into a cookie like shape before baking as they didn’t really spread out like a real cookie. I put Heath bar in mine (so not paleo, but what can you do?) & they ended up like cake balls. Oh, and I used coconut flour instead of coconut. πŸ™‚

    In the oven as we speak! I did see where someone subbed in some coconut flour, I used their ratios so I’m going to see how that goes. I like the consistency that coconut flour lends in cookie recipes asking for almond flour/meal.

    They are done and they were tasty! I do think that it would be wise to advise people to “smush” the cookies down because just putting the tablespoonfuls dropped will have them cook that way. But I did mine with 1 1/4c almond meal and 1/4c coconut flour with no added coconut, and made them with grassfed butter and pastured eggs. SUPER TASTY!! Some of the best paleo chocolate chip cookies I’ve had, thanks!

    Is there something you can substitute something else for the shreaded coconut? I wouldn’t mind but my husband doesn’t like the coconut texture? Or can you even tell it’s in there?

      Haven’t tried substituting anything but you might be able to try a couple tablespoons of coconut flour? I would just add one at a time until you get the right consistency!

        I store them in an airtight container at room temp if they will be used in a day or two, but past that I put them in the fridge!
