Cinnamon Roll Muffins

Cinnamon Roll Muffins


Yields: 8-10 muffins

  • For the Muffins:
  • 6-7 small dates, pitted
  • 1 tbsp water
  • 1/2 cup unsweetened almond milk
  • 1/4 cup maple syrup
  • 2 eggs
  • 2 1/2 cups almond flour
  • 1/4 tsp of sea salt
  • 1/2 tsp of baking soda
  • For the Filling:
  • 2 tbsp cinnamon
  • 2 tbsp honey
  • 1 tbsp maple syrup
  • 2 tbsp grass-fed butter, melted
  • 1 tbsp coconut sugar
  • 1/4 cup of chopped pecans
  • For the Topping:
  • 2 tbsp grass-fed butter, melted
  • 2 tbsp maple syrup
  • 2 tbsp honey
  • 1 tbsp almond butter
  • 1/2 tbsp cinnamon

Preheat oven to 310 and line muffin pan with paper/silicon liners.

In a small, microwave-safe bowl, heat dates and 1/2 tbsp water in microwave for 30 seconds.

Remove and add other 1/2 tbsp water and mash together until a paste forms (should get about 1/4 cup).

In a large bowl, combine date paste, almond milk, maple syrup, and eggs until well mixed.

Add almond flour, sea salt, and baking soda and mix until all ingredients are combined into a batter.

Fill each muffin liner about halfway full with batter.

Make filling by combining cinnamon, honey, maple syrup, butter, coconut sugar, and pecans.

Scoop about 1 tbsp of filling into each muffin.

Using the remaining batter, fill liners until they are just about all the way full.

Make topping by combining butter, maple syrup, honey, almond butter, and cinnamon.

Drizzle topping over each muffin (you may end up with a little extra!)

Swirl topping into muffins using a toothpick or fork.

Bake for 25-30 minutes, or until a toothpick comes out clean in the center.

Remove from oven and allow to cool.

Eat up!

    This sounds fabulous!!! I’ve been craving Cinnabon & have been resisting, this will be perfect!! I have medjool dates, I think they’re too big. What’s the approximate size for a ‘small’ date? Thanks!!

      Don’t worry so much about the size as ending up with 1/4 cup of date paste. Start with 3 or 4 if you think yours are larger and see how much that gets you. You can always add more if needed! :)

    I jus made these and they were fabulous! So delicious :) However, I substituted almonds for pecans and agave syrup for the maple syrup.
