Cashew Cardamom Date Balls

Cashew Cardamom Date Balls


Yields: 8 balls

  • 1 cup raw cashews
  • 1 cup medjool dates, pitted
  • zest of one orange
  • 1/4 tsp cardamom
  • 1/3 cup unsweetened coconut coconut flakes

Combine all ingredients besides coconut in a food processor and process until all ingredients are broken down and well combined (mixture should be crust-like, and stick when pressed together).

Form into bite-sized balls.

Roll in coconut flakes (Note: It may help to dab balls with water if you are having trouble getting the coconut to stick!)

    Ooh, those look awesome!

    I can’t do the coconut shreds (I’m a weird texture person but the Mr would love the coconut) but I bet these would also be good with a quick roll in unsweetened cocoa. Oh hey, I think I have dates on hand now that I think of it. What a shame! šŸ˜‰

    These sound wonderful! Did you use fresh dates or dried ones? I can’t seem to find fresh Medjool dates anywhere where I live :(
