Preheat oven to 350 degrees and line cookie sheets with parchment paper.
Combine almond flour, coconut sugar, baking soda, salt, cinnamon, and spices together in a large bowl.
Add maple syrup and butter and mix until a dough forms.
On a sheet of parchment paper, sprinkle a handful of almond flour to prevent dough from sticking. (You may also want to sprinkle a bit on top of dough/rub a little on your rolling pin to keep pin from sticking).
Roll out dough to about 1/8th-1/4th inch thick (thicker for a puffier cookie)
Use cookie cutter to cut shapes and transfer to cookie sheet. Repeat with remaining dough, re-rolling as necessary.
Bake for 8 minutes, or until edges begin to brown.
Remove from oven and transfer cookies to cooling rack.
