And yes, I actually had those same thoughts while I was making these little beauties. BUT, they’re so good, you guys, AND the temps are still close to 90 everyday in Columbus this week, so just go with me on this one, okay? These will definitely be the perfect addition to your Labor Day plans this weekend, #duh.
Paletas originated in Latin America, but can be compared to pretty much any “popsicle” term you please. Ice pops, fruit pops, lollies, deliciousness-on-a-stick? You choose. But the popsicles are honestly endless. Whether you go for sweet, creamy, fruity, decadent, or even spicy, there are ENDLESS possibilities here. Feel free to use this recipe as a base and add whatever you please! I’m already thinking about my next batch as we speak.
I first discovered paletas this summer while I was visiting my family in Nashville. We went to the cutest little shop there called Las Paletas and I was in love approximately .5 seconds after walking in the door. They had SO many flavors to choose from, both cream and fruit based and I’ve been wanting to make my own dairy-free version ever since I got back! Enter: the Almond Butter Cacao Nib Paleta. Aka heaven on a stick and probably the easiest recipe I’ve ever made (seriously).
These actually got me thinking about opening my own little pop shop and calling it “Tayl-ah’s Palet-ahs.” Does that even rhyme? It’s totally catchy right?

I don’t know about you, but I’m always one to want a little somethin’ somethin’ after dinner, so these babies totally keep me from plowing through an entire pint of ice cream before I go to bed. #TheStruggle
