I’ll be 100% honest with you. I’ve never liked brussels sprouts.
I was deeply scarred by a microwavable bag of brussels sprouts streamers when I was younger and sadly never recovered (images of unseasoned, soggy sprouts still haunt me from time to time). But I’m proud to say that I have faced my brussels sprouts fears in recent times and my life now feels complete again. Ahhhh.
That was a little dramatic, but I think you get the point.
The apple + walnut + maple combo is just the dreamiest combo for this time of year. You could even add some dried cranberries to make it extra fall-y if you want. Hello best Thanksgiving side dish EVER.
Can I tell you guys something exciting? I have just two and a half weeks left until I’m finished with my dietetic internship! Ummm…What?! It just seems so crazy to think that I’m really almost done! For those of you who don’t know, to become a registered dietitian, it is required that you complete an internship program before you are able to sit for your registration exam. I completed my program through Ohio State’s Human Nutrition internship program, and through it, I have worked in a wide variety of settings in the nutrition field. Community, clinical, foodservice, etc., it’s been a long year or so filled with some great experiences, and I’m so excited to be heading toward the finish line and in the final steps of becoming a registered dietitian! Taylor Riggs, RD has a nice ring to it, doesn’t it? 😉
In other news, Woody has been going to puppy kindergarten! Seriously, you guys, it is the cutest thing ever. I mean, who wouldn’t want to hang out with a room full of puppies every week? I keep telling people that if they’re going through a rough (ruff?) time in their life, they should just come and observe puppy kindergarten class, and it will make them feel instantly better. It’s like anti-depressants in the form of tiny animals.
Woody has befriended a labradoodle in the class named Cooper and they are inseparable. At the end of each class we have “puppy play time” where the dogs are let off their leashes to roam free and play with the other pups and the owners get to sit back and watch the hilarity ensue. Woody and Cooper are sort of like the two kids on the playground in grade school who won’t let anyone else into their clique. They cheat in foursquare so they’re the only ones who get to stay in A and B square, they only pass the ball to each other on the soccer field. The other dogs try to join in with them but Woody and Cooper just sort of stare at them for a second and then keep wrestling with each other. Well one of the other dogs had enough of their antics last night and decided to take things into her own hands…
I cry laughing every single time.
