Things have been crazy around here the past few weeks – so much going on! I’m sorry it’s been awhile since I’ve had a new recipe for you, but today I promise I’m totally making up for that with this one. Because, ummm, who WOULDN’T want their own personal chocolate cake? (If you answered “me” to that question, please escort yourself off of this page immediately). You see, it’s not that I haven’t been in the kitchen at all lately, it’s that I’ve been in the kitchen entirely too much working on this crazzzyyy cookbook! (EEEEEEK!) I want to share every single recipe with you right NOW, but, well, obviously I can’t. So unfortunately the old blog hasn’t been getting much love in the new recipe department. But I’m trying harder to change that, I PROMISE.
So besides spending most of my free time whipping up recipes for the book, I also just started a new job! The real world has finally arrived and said, “Welcome to Adult-ing, Taylor.” #scary. It’s my first full-time position since finishing up school and becoming an RD in December, and I’ll be doing health and wellness coaching for a medical management company. I’m super excited about it since wellness and prevention is the side of nutrition I love most, so YAY! So if you’ve noticed that I haven’t been as active as usual on social media/the blog for the past few weeks, those two reasons pretty much explain it 😉
So back to this recipe. I have some other “Just for One” recipes on this blog (see here, here, and here), but this one definitely takes the cake – HA! Oh, come on, I had to. It’s actually perfect timing for this recipe with Valentine’s Day right around the corner, because it’s easily doubled to make for two, but also great if you’re spending the night in Netflix and chilling with your fabulous self. WIN, WIN everyone!
Feel free to top yours with nut butter, chocolate chips, this coconut milk ice cream, etc. YOU CAN’T GO WRONG.
