Whew! Seriously, where do the weekends even go? This one seemed to go especially fast, and to be honest, I don’t think I am mentally prepared to start this work week (but let’s be real, when is anyone ever mentally prepared for Monday?)
This weekend was especially fun because it was spent celebrating my birthday! The big 2-4. I was telling my friend the other day that I really feel like 24 is true “adulting” age. I mean, I’m technically now in my mid-twenties and that just sounds serious, am I right? I’ve got a real job, I’m paying off my student loans, and I’ve even caught myself saying things like “Wow, that’s a gorgeous duvet cover!”
I’ve also found myself trying to invest in nice things for, you know, “the future.” Like kitchen appliances, for example. And this weekend I was gifted one of the greatest investments EVER. My sweet sweet family got me a Vitamix! I cried, you guys. First tears of joy and then tears of terror when I turned it on and it sounded like a jet engine taking off from my kitchen. But I soon realized that was completely normal and was back to sheer bliss in a matter of seconds. I feel like a new chapter in my life has started. Partly because of the age, but mostly because of the Vitamix.
Speaking of bliss, these Lemon Coconut Bliss Bites are about to rock your world. Fun fact: I made a few “ball” recipes for my cookbook, and while I was making them, my mom would chant “Balls for alls, balls for alls!” Mature, Sue. REAL MATURE. But now I totally expect all of you to do the same once you make these and feel an urge to share them with everyone you know. Because you totally will.
