The lemon and coconut give this easy snack a light, zesty taste and they make the perfect pick-me-up when you’re in a pinch or on the go!

Yields: 10 bites



Place the cashews and dates in a food processor and pulse for 30-60 seconds, or until the mixture starts to pull away from the sides.

Add the lemon juice and zest and continue to pulse for 10-15 seconds.

Using your hands, roll the mixture into small balls, about 1.5-2 inches in diameter.

Roll each ball into the shredded coconut to lightly coat.
