Frozen Dark Chocolate Banana Pops

Raise your hand if you agree that nothing says summer like a delicious frozen treat?!

Last summer I made these paletas after being inspired by a trip to Nashville, and now that summer is officially here again, I knew it was time for another cool, yummy treat!

These banana pops are so quick to make and all you need is 4 simple ingredients! FOUR. Plus they remind me of something you’d get fed by a cabana boy on a tropical island in Hawaii while basking in the sun. (Or maybe that’s just what I pretend is happening while I eat them in Ohio?)

Either way, they’re fresh, sweet, and refreshing on a hot summer day, and make for a great treat that feels both indulgent and nutritious at the same time! These are great to make for a summer party OR to just have a batch on hand in the freezer for when your sweet tooth strikes, but you want something a little healthier than an ice cream cone or milkshake.

FROZEN DARK CHOCOLATE BANANA POPS

Yields: 10 pops

  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • 5 bananas, peeled and halved
  • 1/4 cup almonds, finely chopped

Combine the chocolate chips and coconut oil in a small saucepan over low heat, stirring continuously until the chocolate is completely melted, about 2-3 minutes. Set aside.

Place a popsicle stick (or paper straw cut in half) into the sliced end of each banana.

Dip each banana into the chocolate to evenly coat, allowing the excess chocolate to drip off completely before placing the banana onto a baking sheet or large plate lined with parchment or wax paper.

Sprinkle the chopped almonds evenly over each banana before the chocolate sets.

Place the baking sheet in the freezer for at least 10 minutes to allow the chocolate to harden. Enjoy!
