Happy fall, everyone!
I know it’s so cliche to say that fall is my favorite time of year, but come on, what’s not to love!? I mean I can’t think of anything, really. The weather, the leaves, the food (obviously), the clothes, the holidays coming. I just love everything about this season!
The temps in Columbus have still been going back and forth between summer and fall, so I’ve been a little confused as to what my body is craving for breakfast in the mornings – hot, cold? Hot…cold? Helpppppp! Usually once fall rolls around I’m craving warmer breakfasts like oatmeal or avocado toast or some sort of pumpkin-flavored baked good deliciousness, but this year I haven’t quite crossed over yet – probably because I’ve been obsessing over this combo for the past few weeks.
If you follow me on Instagram, you’ve definitely seen me post this breakfast multiple times over the past few weeks. I feel a little guilty for even calling this a “recipe,” because it’s SO simple and easy, but I thought I would share a little glimpse into my everyday, “real life” kind of meals, too. And that’s exactly what this breakfast bowl is!
Coconut milk yogurt has been my JAM lately, and I’ve been into adding a little protein or collagen powder to it to make sure it keeps me satiated in the mornings (since coconut yogurt doesn’t contain natural protein like regular yogurt does). Mixing in frozen blueberries and almond butter also balances the bowl out with healthy carbohydrates and fat, making this bowl a TOTAL star for any meal of the day. Sometimes I even add some cacao powder to give it a rich, chocolatey twist.
Feel free to get creative with your toppings, too! If you’re anything like me, you like to get a little somethin’ somethin’ with every bite, so feel free to add in anything you’d like! Lately I’ve been loving hemp seeds, chia seeds, and crumbled (pumpkin) muffins. You seriously can’t go wrong!
