I had originally planned to post a fall-inspired veggie dish this week, but with it being Halloween today, I figured a treat would be much more appropriate, right?
It’s no surprise I’m a big fan of these little snacks (you can find more of my energy bite recipes here, here, and here), because they pack such a big punch in such a small package! This pumpkin version contains just 3 major ingredients: dates, nuts, and pumpkin, plus a few spices to add to the fall flavor.
I love that these guys are sweetened only with dates (you can add a dash of maple syrup if you need a little more, but I think the dates work well enough on their own!), have a great balance of healthy protein, carbohydrates, and fat, and they are FULL of fiber, too. Ummm, yes please! Plus, they take less than 10 minutes to make.
I love throwing two or three in my purse when I’m out and about or nibbling on one for a post-lunch or dinner treat, so I have a feeling these will definitely be making it into my Sunday food-prep rotation on the reg this fall.
