Happy (almost) Thanksgiving!

I’m a big fan of pumpkin pie, but to be honest, the idea of making an entire pie has always been a little intimidating to me. The crust, the filling, everything in between. Not to mention, the whole process can be rather time-consuming. For the past few years, I’ve been making this pumpkin pie for our family’s dinner (which is really good), but this year I wanted to simplify things a little more.
These bite-sized pumpkin pies are easy to make, a little different, and come with built-in portion control (though I bet you won’t be able to eat just one!) All you need is a food processor and a muffin tin and you’re all set! Because this year, I’m thankful for #simplicity.
