Lightly coat the cups of a mini muffin tin with coconut oil.
Place the dates in a food processor and blend on high until broken down (about 30 seconds).
Add the pecans and continue to blend until they are well-incorporated and the mixture begins to pull away from the sides.
Press the mixture into the bottom of the muffin tin, filling each cup about 1/3 of the way.
Combine the remaining ingredients in a food processor and blend on high until smooth (30-60 seconds).
Pour the mixture into the muffin tin to fill each cup the remainder of the way.
Place the tin into the freezer until the filling is set (at least 30 minutes), then use a knife to loosen each cup and remove before serving.
Store in freezer.
