Today I wanted to share one of my favorite recipes from the cookbook – these Banana Chocolate Chip Muffins. I love these muffins because they are 1. SUPER easy to make 2. SUPER delicious and 3. made of SUPER simple ingredients. They’re awesome for a quick breakfast, afternoon snack, or even after-dinner treat, and the best part is that they are sweetened only with bananas and a couple tablespoons of honey. Plus, they are packed with healthy fats and a little protein from the eggs and almond butter which gives them some serious staying power.
You could definitely omit the chocolate chips (I mean, if you’re crazy), or substitute them out for blueberries if you’re going for a different vibe – totally up to you! The ingredients in this recipe give a great base for anything you want to dream up!
