SOFT AND GOOEY PUMPKIN CHOCOLATE CHIP COOKIES

  • 1/2 cup almond butter
  • 1/2 cup pumpkin purée
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup coconut sugar
  • 1/4 cup tapioca flour
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1 cup dark chocolate chips

Preheat oven to 350 and line baking sheet with parchment paper.

Combine wet ingredients in a large mixing bowl.

Combine dry ingredients in separate bowl.

Slowly add dry ingredients to wet and mix until well incorporated.

Stir in chocolate chips.

Spoon batter onto parchment paper (it will be pretty thin) and spread into circles 2-3 inches in diameter.

Bake for 10 minutes.

Remove from baking sheet and enjoy!
